One grape variety, selected origins
Il Sauvignon Blanc belongs to Nonino’s Monovitigno range. The idea is to distil the pomace of one grape variety separately so its identity remains recognisable.
Fresh pomace is selected and destemmed, then batch-distilled in copper steam stills. The spirit rests for six months to a year in stainless steel. This version is not matured in a wooden barrel.
A distinctive green character
Nonino’s tasting notes place elderflower and green pepper alongside suggestions of bread and vanilla. The result is an elegant, aromatic profile with a green character that sets this grape apart from its neighbours.
A useful guide to choosing
We offer a 4 cl measure at 41% vol. Elderflower, green pepper, herbal, aromatic and unaged grappa are useful search terms on the menu.
Compared with Moscato, which leans more towards rose and sage, Sauvignon Blanc offers a different route through the unaged grappas.
