LA PIZZA DELL’APPIA ANTICA

Inspired by the legendary Via Appia Antica, this pizza is topped with a generous portion of Porchetta, accompanied by fior di latte, cherry tomatoes, aubergines, onions, peppers and a hard-boiled farm egg.
Porchetta, an Italian classic, is carefully added at the end of cooking to preserve its tenderness and intense flavour.
After the pizza comes out of the oven, a touch of black pepper and a few cashew nuts finish our creation.
Like it spicy? On request, fresh chillies can be added before cooking to give this pizza some heat.
What is Porchetta? It is an Italian speciality of roasted pork, flavoured with aromatic herbs, with its origins in the regions crossed by the Via Appia Antica. A symbol of conviviality and sharing, Porchetta is traditionally served at local festivals and gatherings.
And the Via Appia Antica? Known as the ‘Queen of Roads’, this legendary Roman road linked Rome to southern Italy, carrying not only goods but also a rich culinary tradition, including Porchetta.
